Baking Timeline
Plan your baking schedule backwards from when you want fresh bread.
A typical sourdough timeline is 4-8 hours of bulk fermentation, 1-3 hours shaping and proofing (or an overnight cold proof), then a 45-minute bake. Set your target time and the planner works every stage backwards from there.

❓ Frequently asked questions
How does the baking timeline work?
You pick when you want fresh bread ready, and the planner works backwards to tell you when to mix, fold, shape and bake.
How long does sourdough take from start to finish?
Often around 24 hours including fermentation — a few hours of bulk, then a proof (frequently overnight in the fridge), then baking.
Can I cold-proof overnight?
Yes. Retarding the shaped dough in the fridge overnight is convenient and deepens flavour — just add that time to your plan.
